White Trash Cooking Month! Gourmet Recipe #4: Quiche Impossible


And for our last installment for White Trash Cooking Month, I would like to offer up TWO recipes.  The first, pictured above, is for a crustless quiche I heard about while doing the South Beach Diet.  It is completely healthy (so doesn't belong in this post) but also very easy (so I figured I'd include it).

Super Awesome Healthy Quiche
1) Sprinkle about a cup of mozzarella cheese in a pie plate
2) Add some veggies you've steamed in the microwave (white trash!).  I like spinach (because when the hell else am I going to eat it?), but I've also done chopped broccoli, and -- here -- I'm doing beet greens from the garden (since I have a freezer-full).
3) Sprinkle on some cubed turkey ham.
4) Beat 6 eggs and 1 cup of milk; season with some salt and pepper; pour mixture over the ingredients in the pie plate.
5) Sprinkle some Parmesan or feta on top.
6) Bake at 350 for 30-45 minutes.

Notes:
  • While the Parmesan/feta isn't necessary, these cheeses add an extra tang that turns the otherwise-slightly-bland meal into a gourmet feast.  We prefer the feta over the Parmesan.
  • Be sure to strain as much water as you can from your steamed veggies; otherwise, your quiche will be watery.
  • I prefer to bake mine in a square pan; it feels 'heartier' that way.  I usually have to add a few more eggs and a little more milk to compensate for the extra depth.
  •  Stored in the fridge, it's easy to pop in the microwave the next morning.
  • Bee -- believe it or not -- loves the quiche.  He'll eat it for breakfast, lunch or dinner.  (Since it started as a 'diet' food for me, I do not have the same enthusiasm for it.  However, since Bee's suggestion of adding the delectable feta, I've enjoyed it much more.)

And now, for the White Trash version of a quiche.  I don't have pictures, since my stomach couldn't take me making it up tonight (all those pizzas and peanut butter cups are catching up with me).  But just imagine the greasy, bubbling goodness.

Quiche Impossible
Mix:
1) 3 eggs
2) 1/2 c. Bisquick
3) 1/2 c. melted butter (mmmm!)
4) 1 1/2 c. milk
5) 1/4 t. salt, dash of pepper
Pour into a pie plate.  Then sprinkle on and push below the surface:
6) 1 c. shredded cheese (Swiss or cheddar)
7) 1/2 c. ham or bacon (That's right.  Bacon)
Bake at 350 for 45 minutes.
Cool 10 minutes before cutting.

Notes:
  • Your tastebuds will thank you.
  • Your arteries won't.
